METHODFill a Collins glass with cubed ice. Add to the glass the Smugglers Gin, Cointreau, lime Juice and Simple Syrup. Stir thoroughly with a barspoon. Top with Ginger beer, then stir again and top with ice. GarFirstly, chill a coupe glass. In a shaker add the beetroot juice, a small piece of chopped beetroot, and finely sliced apple. Muddle thoroughly to release the flavours, then add apple juice to the mixture. Shake without ice and strain into a glass (save your coupe glass for later). In a clean shaker add Smugglers Gin, Simple Syrup, egg white and the mixture. Shake without ice for 30 seconds to get a solid foam, then add cubed ice and shake for a further 30 seconds. Double strain into your coupe glass, and leave to settle for maximum enjoyment! Garnish with a zesty slice of lime and settle in for the storm!
