Edinburgh Ice Tea

METHOD
Steep the tea leaves or tea bag in a pan of hot water, then remove the tea and add the orange peel, mint, ginger and sugar. Simmer gently until the sugar is dissolved. Strain the liquid into glasses or a jug. Finally add the Smugglers Gin and lemon juice, and chill until cold. Enjoy over ice and garnish with mint or slices of orange.

Fresh mint leaves
