Edinburgh Ice Tea
What’s better than a lovely cup of tea?
We think we have the answer.
We’re working on the name - Gintea, Gin-ty, Edinburgh Ice Tea?
But the flavours are ALL there.
This is a drink fit for snuggling by the fire, laughing with the girls in the hot tub or relaxing on the terrace and watching the world go by. Perfect.
Fresh, citrus notes and depth of flavour make this a firm favourite. Not to mention it’s easy to make for 1 or in bigger batches.
Choose a clean tea (we like green tea, assam or even earl grey), let the tea steep for 3mins in a pint of hot water (it’s helpful to do this part in a saucepan). Remove the leaves (or bag!), and add the orange zest, sugar, mint and ginger.
Simmer ever so gently stirring all the while - just long enough to dissolve the sugar.
Strain the liquid, pressing on the solids to get the maximum flavour through into the jug, glasses or other bottle. Add in the Smuggler’s gin and the lemon juice and chill until cold.
When you’re ready to drink it, simple pour over ice, garnish with mint, orange slices or peel, sit back and enjoy!
1 pint of water
1 tablespoon or tea leaves, or 1 tea bag
2 Long slices of orange peel
50g sugar (reduce/increase to taste)
1 Sprig of fresh mint leaves
50ML fresh lemon juice
Lemon/orange slices for serving
